Carrot Orange Bars
Makes 24 to 36 squares, depending on how you cut them.
Ingredients

1/2 cup butter or margarine, softened
3/4 cup sugar
1 cup peeled, cooked and mashed or pureed carrots (scant pound)
1 egg
2 cups flour
2 tsp. baking powder
1 tsp. salt
1/2 tsp. sugar
1/2 tsp. allspice
1/4 tsp. cinnamon
1/3 cup orange juice
1 tsp. grated orange peel
1/2 flaked coconut
1/3 cup chopped walnuts
Cream the butter and sugar together. Add the carrot and egg and beat with an electric mixer until very well blended. Sift the flour, baking powder, salt, allspice, and cinnamon together and beat them into the carrot mixture. Beat in the orange juice and peel, and stir in the coconut and walnuts. Spread the batter evenly in athe prepared pan. Bake at 350° F for about 35 minutes.
Glaze
3 Tsp. orange juice
3/4 tsp. grated orange peel
2 cups confectioners sugar
Mix all the ingredients, and spread on the cake when it is almost cool. Sprinkle the top with grated raw carrot, if desired. Cut into squares when completely cool.
